Eli makes a “el supremo” banana variety and this morning I had a go at my own version.
(Between Eli and myself it is difficult to know whom makes the best).
My recipe this morning was as follows:
Mix wholemeal flour + one googy egg + milk + pinch of salt.
Melt a “slabet” of butter in the frying pan (the more butter the better).
Once the butter is nicely melted and slightly splattering pour in some mix.
Flip the pancake once the bottom side has gone a golden brown.
Cut some slices of tasty cheese and lay on top of the cooking pancake.
Sprinkle some herbs of choice and some black/cracked pepper on top of the cheese.
Put on low heat and allow the cheese to mmmeeeellllltttttt !!
Serve with baked beans all over the top of the melted cheese.
Bock in and don't wait.
Have a piping hot coffee ready to go for when the pancake is finished.
Have a ciggie with the coffee (if you are that way inclined).
A variation of the above recipe would be…
Instead of the baked beans…
A couple of fried (or poached eggs) on top of the cheese.
Fried tomatoes
Crispy bacon
Tonnes of maple syrup poured all over !!
A side serving of home made chips
It is paramount that you go for a cholesterol test after eating pancake recipe version two !!
Now for a change of subject and some tidbits (another word for sundry)…
- I have just about given up on the problem with sending email attachments. Has been an issue for the past couple of weeks and our IT guys are denying any responsibility for the problem. I have sniffed, diagnosed and googled, re-installed, patched and investigated. My findings suggest a problem with UNITECH's email server. No attachments – no blog photos – sorry folks!!
- Tis stinking hot today. It might even be the hottest day that I have experienced in Lae. It is that hot that just sitting in the shade, reflecting – causes one to perspire like a beast. Thank god for office with an air con (one that works too!).
- This coming week will determine whether I make it back to Sydney by xmas. My primary concern is getting all monies owed to me paid out before departure from UNITECH. I have an appointment with the Acting Vice-Chancellor (VC) tomorrow at 2pm. Fingers crossed.
- In the meantime the Lae “story” slowly draws to an end…
